Paleo chocolate cake / Chokladkaka

This cake is so amazingly tasty and full of flavor. I have a 100% quality dark chocolate in this cake, but if you don´t find any you can use som other dark quality chocolate containing 70% cocoa content.

Ingredients
180-200 g 100% dark chocolate
180-200 g grassfed butter or coconut oil
2 tsp natural vanilla powder
1 tbs honey (optional)
4 eggs

Instructions
1. Melt together the chocolate and butter in low heat.
2. Combine eggs with vanilla powder and beat for several minutes til it´s fluffy.
3. Stir together the chocolate/butter-mix with the egg-mix.
4. Pour into greased round cake pan (10 inch) (26 cm).
5. Bake at 400F (200C) for 6 minutes.
6. Let it cool completely before serving.
7. Store in fridge and you can also freeze it.

3. Mixa ihop choklad/smör-blandingen med äggblandningen.
4. Häll ner smeten i en smord springform (26 cm i diameter).
5. Grädda i 200C varm ugn i 6 minuter.
6. Låt kakan svalna helt innan servering.
7. Förvara i kylen och det går även bra att frysa kakan.

Chia pudding with vanilla and cacao

It 's not a bad thing this with chia, this little super seed that is full of goodness. This is a wonderful thick and creamy pudding to eat for breakfast. No sugars added at all.

Ingredients for 3 small jars:
1,5 cups liquid (cream, almond milk or coconut water, but I have also done this on berries)
1 tbs cacao powder (omitted if the pudding is made on berries)
1-2 tsp vanilla powder
0,5 cup chia seeds
Frozen crushed raspberries (optional)

Steps:
1. Stir together the liquid with cacao powder and vanilla powder.
2.
Combine the chia seeds with the liquid and stir well, and stir few times to avoid lumps.

3.
When the pudding starts to thicken (takes about 10 min) pour over the pudding in jars.

4.
When the pudding is ready for the fridge I crush some raspberries on top of the pudding .

5. Let he pudding overnight in the fridge,
and can be stored in fridge for several days.

Serve it with: Chopped fruit or berries. For example kiwi, strawberries, raspberries , blueberries and whipped cream or almond milk.
