Chia pudding with vanilla and cacao



It 's not a bad thing this with chia, this little super seed that is full of goodness. This is a wonderful thick and creamy pudding to eat for breakfast. No sugars added at all.

Ingredients for 3 small jars:
1,5 cups liquid (cream, almond milk or coconut water, but I have also done this on berries)
1 tbs cacao powder (omitted if the pudding is made on berries)
1-2 tsp vanilla powder
0,5 cup chia seeds
Frozen crushed raspberries (optional)
 
Steps:
1. Stir together the liquid with cacao powder and vanilla powder.
2.
Combine the chia seeds with the liquid and stir well, and stir few times to avoid lumps. 

3.
When the pudding starts to thicken (takes about 10 min) pour over the pudding in jars. 

4.
When the pudding is ready for the fridge I crush some raspberries on top of the pudding .

5. Let he pudding overnight in the fridge,
and can be stored in fridge for several days.

Serve it with: Chopped fruit or berries. For example kiwi, strawberries, raspberries , blueberries and whipped cream or almond milk.

Seed Crackers


These lovely seed crackers are so good and healthy. 

Paleo seed crackers

2 cups flax seeds
1.5 cups pumpkin seeds
1 cup sesame seeds
1 cup sunflower seeds
2 cups water
a few pinches of unprocessed sea salt

1. Mix together all the seeds and pour over the water (so it barely covers).
2. Let swell for about 40-60 minutes.
3. Spread evenly on a baking paper.
4. Dry in the oven at about 100C (212F) for about 2 hours.
5. Eat with mashed avocado or some other good and healthy spread.
